Herbs are usually high value crops with a continuous yield. Herbs can be easier to grow than greens, but take a longer time to reach maturity. 

This longer maturation time can cause problems in case of an emergency, since it takes longer for a grower to reach full production again; however, most herbs can be harvested multiple times. Herbs regularly bring $1.99/oz.-$2.99/oz.
